The golden girl of Persian cuisine, Sabrina Ghayour shares 3 exciting recipes ahead of her stint at this year's Woking Food and Drink Festival.
No stranger to the foodie scene, chef, food writer, and cookery teacher Sabrina Ghayour has been championing Middle Eastern cuisine with her simple and flavourful dishes.
Her latest book, Bazaar, brings her passion for simple ingredients and strong flavours together. The result is a collection of veggie-friendly recipes that pack a punch, from seasonal salads to comfort food and sweet treats.
As the award-winning chef prepares to headline this year’s Woking Food and Drink Festival – taking place from 30 August-1 September, 2019 – she shares 3 beautiful recipes to help you experience new flavours and bring Middle Eastern-inspired dishes to the table.
SUMAC, TOMATO, AND GARLIC TOASTS WITH LABNEH
“I’m obsessed with tomatoes on toast, either in the Spanish style of pan con tomate or the Italian bruschetta. I used to make mini versions of these for clients as canapés, which proved so popular that I was asked to serve them as starters rather than finger food. The addition of sumac gives the tomatoes a citrusy note, and I never need an excuse to add coriander to tomatoes. They are incredibly moreish and I am happy to eat several of these as a meal by themselves; simple yet terribly good.”
“This is my version of a taco, but with all the punch and vibrancy you would associate with Middle Eastern flavours. You can substitute the halloumi for Indian paneer or tofu. The flatbreads alone are incredibly moreish – you may never buy shop-bought flatbreads again!”
“Ras el hanout is a highly prized blend of spices that packs an earthy punch, so you wouldn’t be terribly out of line for questioning my state of mind when I first made this cake. I am pleased to report that it was a winner – and by the way, it is the rose icing that makes the cake by complementing the spiciness beautifully.”
