Easy Vegan Recipes: How to Make Veg Stir-fry With Peanut Satay Sauce

For years a big veg stir fry was my go-to meal as it’s so quick and easy to make – tasty, healthy and a brilliant way of using up any veg leftovers you may have in the fridge.

In order to make a really special meal, you need a delicious sauce. This stir-fry is transformed into something fantastic with this incredible peanut satay sauce, which is lightly spiced, nutty, salty and creamy.

I love to add in some crispy tofu to make it substantial, and it adds some great plant-based protein. I can understand that some people are nervous about tofu and there’s a huge difference between soggy under-flavoured tofu and the crispy pan-fried variety that has been marinated for maximum flavour. I recommend taking your time to make sure each side of the tofu is super crispy before adding them to the lovely satay veggies. If you don’t fancy adding tofu, then some other options are tempeh, pulses, peas or roast veg.
