FEARNE COTTON’S VEGAN RECIPES
These delicious suppers from Fearne Cotton are easy, pleasing platefuls to make your vegan journey as simple as possible!
1. TOMATO DAHL WITH FLATBREADS
“Dahl is a really good vegan option for a quick lunch, as its predominantly lentils, which are a good source of magnesium, fibre and complex carbohydrates that help to boost metabolism. Never underestimate a lentil! This is also very much a 'chuck it in the pan' job, so little fuss for an amazing meal all-round. Serve with the flatbreads, or straight up, or with rice.”
2. MAC AND CASHEW CHEESE
“Is there anything greater than mac ’n’ cheese? The creamy, comforting and warming qualities of this dish will ensure it remains a firm favourite classic of mine forever. Making vegan cheese has been a real revolution for me lately. I love cheese, so trying to reduce my dairy intake has been something I've taken care and time to explore throughout this journey. Cashews make such a brilliant base for all things 'vegan cheesy', and the nutritional yeast gives it real flavour.”
3. BROCCOLI KATSU CURRY
“This is weirdly simple. It sounds and looks like it might be time-consuming or complicated, but once you've tried this recipe you'll see just how easy it is. I adore roasted broccoli and it works so well in this curry. The more veg the better, and you're certainly getting your fill with this dish. The sauce will make your taste buds dance and you'll feel full, yet not sluggish in the slightest, after devouring this incredible dinner.”
