1. Aubergine & Walnut Parmigiana
When it comes to hearty and indulgent dishes, Italian cuisine often comes to mind. This parmigiana is seriously satisfying, and is gluten-free. You simply make the filling, which is packed with healthy tomatoes, broccoli and peppers, then stuff and roll slices of aubergines with the filling and chunks of mozzarella. Sprinkled with extra mozzarella and walnuts, the dish all comes together in the oven and you'll be treated with gooey cheese, earthy toasted walnuts and soft, fragrant vegetables. Serve with salad and crusty bread to mop up the leftover sauce and tomato juices.
2. Vegan Creamy Lemon & Basil Pasta
For something lighter yet equally as indulgent, this vegan pasta is a winner. To create the creamy texture of the sauce, tofu, plant milk, mustard, nutritional yeast and Cream Cheese flavouring are combined, whilst the addition of lemon and basil add a fresh twist. This recipe work well for both lunch and dinner.
3. Mafalda Corta with Vegan Mushroom Lentil Ragu
This unique shaped pasta is perfect for ensuring you enjoy plenty of flavour in every bite. Because there's nothing worse than your pasta and sauce separating in the bowl. The vegan ragu is ideal for those who are trying to cut down their meat intake as well, as lentils make a great substitute for more traditional mince meat sauces. The sauce is quick and easy to make, and is has a lovely extra boost of flavour from fresh rosemary.
