I’m the biggest fan of flatbread pizzas – super fast to make, and the topping options are endless! It’s one of my go-to stand-by meals, and unlike traditional pizza dough, which needs proving, my speedy flatbread based can be made in minutes and is just as fluffy.
You can, of course, use ready-made pizza bases, but I don’t think you can beat a freshly made one. You can use your own choice of flour; I particularly like using wholemeal or spelt as an alternative to white, and this is ideal if you’d like a healthier option.
The secret to the fluffy texture is using self-raising flour, which creates a lovely bouncy bread that’s made even better if you griddle it – just make sure you keep them warm under a clean tea towel until you top them.
If you don’t have any self-raising flour, you can create the same effect by using a plain flour of your choice and one teaspoon of baking power.
Some of my all-time favourite toppings are: pesto, sun-dried tomato sauce, olives and capers. You could also try pineapple chunks, sweetcorn, roast veg, vegan pepperoni, and cashew cheese.
Once you’ve made a few flatbread pizzas, you’ll never look back!
