10-minute Vegetable Rice Recipe: Veggie

Ingredients:

250g pouch Uncle Ben’s Oriental Soy Sauce & 5 Spice Wok Rice
150g sugar snap peas or mange tout
150g baby sweetcorn
1 small red pepper, deseeded and cut into thin strips
1 courgette, thinly sliced
200g button mushrooms, finely sliced
40g unsalted peanuts, chopped
1 tbsp vegetable oil

method:

  • Heat the oil in a large non stick frying pan or wok. Add all of the vegetables and cook over a high heat for 2-3 minutes, until just soft
  • Add the sugar snap peas or mangetout, baby sweetcorn, red pepper and the sliced courgette and mushrooms. Stir fry and continue to cook for 1-2 mins.
  • Stir in the Uncle Ben’s Oriental Soy Sauce & 5 Spice Wok Rice and cook for a further 1-2 minutes. Spoon into bowls and garnish with chopped peanuts.
