Almond Yoghurt Hummus

Cost Cutting Eco Friendly Quick Make Vegan Friendly
This creamy hummus has a delicious Mediterranean twist
Ingredients:
6 tbsp Alpro plain with Almond 3 tbsp lemon juice 1 garlic clove, crushed 2 tbsp tahini 3 tbsp extra virgin olive oil, plus a little extra for drizzling 400g chickpeas 1 handful of parsley, chopped flat leaf 1 tbsp almonds, toasted and flaked pinch of salt and pepper pinch of paprikamethod:
- Drain the chickpeas and rinse under cold water.
- Add the chickpeas to a food processor along with the Alpro Plain with Almond, some lemon juice, garlic and tahini.
- Turn the food processor on and slowly pour in the extra virgin olive oil. Process until smooth and season to taste.
- Sprinkle over the toasted almonds, paprika and flat leaf parsley. Finish with a swirl of extra virgin olive oil.
