Anita Rani’s Weekend Pancakes

Strictly Come Dancing semi-finalist and Countryfile presenter Anita Rani shares her favourite pancakes – perfect for the weekend when there’s time to indulge! Sit down for breakfast, stand up for farmers this Fairtrade Fortnight, which runs from 29th February until 13th March.
Ingredients:
For the batter 170g plain flour 30g Fairtrade caster sugar A pinch of salt 2 free-range eggs 250ml milk For the filling 3 Fairtrade bananas 2 Fairtrade lemons 100g Fairtrade honey 80g Fairtrade cashew or pecan nuts 2 tsp Fairtrade cinnamon 100g yoghurtmethod:
- Sieve the flour, salt and sugar into a bowl. Beat the eggs lightly and whisk into dry ingredients.
- Add milk gradually and whisk to a smooth batter. Set aside for 30 mins to rest.
- Place a medium frying pan over a medium heat and oil the pan. When hot, add a ladle of batter and fry for 1 min until golden – flip and fry the other side to get an even colour.
- Transfer to a plate, and squeeze some fresh lemon juice over the pancakes and spread with yoghurt.
- Add bananas, honey and crushed cashew nuts with a sprinkle of cinnamon and serve.
