Apple and Cinnamon Muffins

“This has to be the easiest muffin recipe in the world, and it’s much more economical than buying them from a shop. Why not treat yourself to wonderful homemade bakes for breakfast for a change?”
Ingredients:
150g chunky apple sauce125g Total Greek Yoghurt
200g plain flour
2 tsp baking powder and 1 tsp
bicarbonate of soda
pinch of salt
pinch of ground nutmeg
2 tsp ground cinnamon
100g soft brown sugar
1 large free-range egg
100g butter, melted
1 tsp vanilla essence
method:
- Combine all the dry ingredients in a bowl and in a separate bowl combine all of the liquid ingredients. Mix the two sets of ingredients together until evenly combined, taking care not to over-mix.
- Spoon into muffin tin lined with paper muffin cases and bake in a preheated oven at 200C/400F/Gas 6 for 12-15 minutes till golden and firm. Cool slightly and lightly dust with icing sugar before serving.
