Aubergine and Goat’s Cheese Tacos

Tacos are typically made with seasoned mincemeat, but this meat-free dish with goat’s cheese makes a tasty break from the norm.
Ingredients:
1 packet of Santa Maria Taco Shells 2 aubergines 1 red pepper 100g goat’s cheese 1 sachet Santa Maria Taco Spice Mix Rapeseed oil Sweet chilli sauce Fresh coriander, to garnishmethod:
- Slice the aubergine and pepper into small pieces and fry in rapeseed oil.
- Season with the Santa Maria Taco Spice Mix and fry five minutes.
- Spoon the vegetables into the Santa Maria Taco Shells.
- Crumble the goat’s cheese over the top and add a drizzle of sweet chilli sauce.
- Garnish with coriander and serve up.
