Banana Chip Cookies

Ingredients:
350g plain flour1 tsp bicarbonate of soda
250g butter
175g Fruisana fruit sugar
2 large free-range eggs
1 tsp vanilla essence
1 large ripe banana
100g banana chips
100g glace cherries, chopped
method:
- In a large bowl sieve the flour and bicarbonate of soda, and rub in the butter until the mixture resembles breadcrumbs. Stir in the fruit sugar.
- Beat in the eggs and vanilla essence. Mash the banana and stir into the mixture with the banana chips and chopped cherries to produce a soft mixture.
- Place tablespoons of the mixture onto greased and lined baking trays. Bake in the oven at 180C/350F/Gas 4 for 18-25 minutes until set and lightly gold. Place on wire rack to cool before serving.
