Banana Spring Rolls
Serves: 6
Ready in: 30 to 60 mins
Ingredients:
6 sheets spring roll pastry4 chopped bananas
2 tbsp soft dark brown sugar
1 vanilla pod, scraped
100ml water
75g sugar
[hd]For the dipping sauce[/hd]
1 pot Alpro soya chocolate dessert
50g melted 70% chocolate
3 tbsp Alpro soya plain yoghurt alternative
method:
- Boil the water and sugar for five mins until syrupy. Lay out the sheets and divide the bananas between the sheets. Sprinkle the bananas with sugar, mixed with the vanilla.
- Brush the sugar syrup around the edge of the pastry, roll into a tight sausage-shape, brush with more sugar syrup and bake at 180C/350F/Gas 4 for eight minutes, until golden. You can roll in more sugar when removed from the oven if desired.
- For the dipping sauce, gently heat the Alpro soya chocolate dessert in a pan with the soya yoghurt. Stir in the melted chocolate. Serve so that the banana rolls can be dipped into the chocolate sauce.
