You needn't just cook skewers or veggie burgers on the barbecue; just a sheet of strong foil opens your barbecue up to lots of news dishes, like these scrumptious potato wedges
Ingredients:
4 medium smooth potatoes, such as Desiree, cut into wedges1 onion, peeled and cut into wedges
1 red pepper, deseeded and cut into wedges
1 yellow pepper, deseeded and cut into wedges
2 eating apples, cored and cut into wedges
2 tbsp olive oil
[hd]For the Barbecue Sauce[/hd]
4 tbsp tomato ketchup
1 tbsp malt vinegar
1 tbsp mustard
5 tbsp orange juice
method:
- Preheat the oven to 200C/400F/Gas 6. Place all ingredients (except for the barbecue sauce) into a sandwich bag and toss to coat.
- Place on a baking tray and roast in the oven for 25 minutes until brown and tender.
- Meanwhile, place all the ingredients for the barbecue sauce in a bowl and bring to the boil. Place in a ramekin.
- Remove from the oven and place in a bowl to serve, with the ramekin of barbecue sauce alongside to dip into.
