Bean and Carrot Patties
Ingredients:
1 onion, finely chopped1 tbsp vegetable oil
2 garlic cloves, crushed
450g carrots, trimmed, washed and roughly chopped
1 tsp ground cumin
1 tsp ground coriander
200ml vegetable stock
salt and freshly ground black pepper
400g can mixed beans, drained
75g fresh wholewheat breadcrumbs
3 tbsp chopped fresh coriander
a little spray olive oil or olive oil to brush
bread rolls and salad leaves, to serve

225g white cabbage, stalk removed
225g carrots, washed
half a small onion, finely chopped
4 tbsp virtually fat-free mayonnaise
4 tbsp low-fat natural yoghurt
2 tsp Dijon mustard
