Braised Red Cabbage

Ingredients:
25g butter1 onion, finely chopped
500g cabbage, thinly sliced
2 tbsp light muscovado sugar
2 tbsp red wine vinegar
1 tsp ground mixed spice
150ml apple juice
sea salt and freshly ground black pepper
225g blackberries
method:
- Melt the butter in a saucepan and fry the onion for 3-4 minutes. Stir in the cabbage along with the sugar, vinegar, mixed spice and apple juice.
- Season, cover and cook gently for 30 minutes, stirring occasionally. Add the blackberries, gently cook for a further 10 minutes and serve.
