Bramley Bruschetta
Serves: 4
Ready in: 15 to 30 mins
Ingredients:
2 tbsp vegetable oil1 red onion, sliced
1 red chilli, deseeded and chopped
350g Bramley apples, peeled, cored and chopped
2 tbsp red wine vinegar
3 tbsp light soft brown sugar
3 tbsp cranberry sauce
8 slices walnut bread, toasted
120g vegetarian goat’s cheese log, sliced into thin rounds
method:
- Heat the oil in a pan and fry the onion and chilli for 8-10 mins until softened.
- Add the Bramleys, vinegar, cranberry sauce and sugar. Season then cook for 8-10 mins until soft and most of the liquid has evaporated. Cool. This relish can be stored for up to a week.
- Divide the apple and onion mixture among the toasted bread then top with the goat’s cheese. Grill for 3-5 mins until the cheese begins to melt.
