Breakfast Crumpets

Ingredients:
1 free-range egg2 crumpets
a little butter
[hd]For the toppings (optional)[/hd]
honey
fresh or defrosted berries
crème fraîche
fresh or defrosted spinach
sliced mushrooms
vegetarian Cheddar cheese, grated
method:
- Beat the egg in a shallow bowl.
- Dip two crumpets in and fry in a tiny bit of melted butter until golden. Then top with your choice of sweet or savoury toppings. :
- For a sweet topping: top with a drizzle of honey, mashed-up berries and a blob of crème fraîche.
- For a savoury topping: Pan-fry some some spinach or mushrooms in a knob of butter until wilted or cooked and soft. Serve on top of your crumpets with a sprinkling of grated Cheddar cheese. Recipe taken from innocent's recipe book, Hungry? (£20, Fourth Estate)
