Breakfast Loaf

Breakfast Loaf Recipe: Veggie

Ingredients:

3 Weetabix, crushed
175g Demerara sugar
175g mixed dried fruit
300ml milk
1 free-range egg, beaten
200g self-raising flour
50g walnuts, chopped

method:

  • Place the crushed Weetabix, sugar and mixed fruit in a bowl. Add the milk, stir, cover and soak for between 3-6 hours.
  • When ready to cook, preheat the oven to 140C/275F/Gas 1. Grease and line a 900g loaf tin.
  • Add the egg, walnut and flour to the soaked mixture and fold until thoroughly mixed. Spoon into the prepared tin and bake into the oven for 11/4-11/2 hours. Serve spread with butter and jam.
