Bulgur Wheat, Feta and California Walnut Salad

This quick and easy salad is perfect for a light lunch!
Ingredients:
200g bulgur wheat350ml hot vegetable stock
100g California Walnut Halves
1 red apple, cored and sliced
200g feta, crumbled
25g parsley, chopped
juice of 1 lemon
2 tbsp walnut oil
1 tsp honey
method:
- Preheat the oven to 200C/400F/Gas 6. Place the bulgur wheat in a small saucepan, and pour over the stock. Cover and bring to the boil. Cook for two minutes, then remove from the heat and allow the bulgur wheat to steam until tender. Leave to cool.
- Meanwhile, roast the walnuts for 5-6 minutes. Stir the walnuts into the bulgur wheat with the apple, feta and parsley.
- Whisk together the lemon juice, oil and honey and toss into the salad. Season to taste.
