Cheshire Cheese Melt with Apple and Red Onion Relish
Serves: 2
Ready in: 15 to 30 mins
Ingredients:
1 tbsp organic olive oilsmall knob of organic butter
1 organic red onion, thinly sliced
1 organic red apple, cored and thinly sliced
1/2 tsp organic caster sugar
few drops of organic balsamic vinegar (optional)
2 slices crusty farmhouse load or ciabatta
100g organic vegetarian Cheshire cheese, cut into slices
fresh organic rosemary or thyme sprigs
freshly ground organic black pepper
method:
- Heat the olive oil in a frying pan and add the butter and onion. Cook over a medium-low heat, stirring often, for a few minutes. Add the apple slices and cook until softened.
- Sprinkle in the sugar and cook until the onion and apple turn a rich, golden brown. Remove from the heat and stir in a few drops of balsamic vinegar (if using).
- Preheat the grill to high. Toast slices of bread on one side only. Heap the onion and apple mixture onto the untoasted sides, top with cheese and sprig or two of rosemary or thyme and season to taste. Grill until the cheese starts to bubble and serve immediately.
