Chilli Potato Cakes

Ingredients:
200g floury potatoes, diced1/4 red chilli, finely chopped
1/4 tsp smoked paprika
25g vegetarian Cheddar cheese, grated
1/2 tbsp flour
small sprig coriander, chopped
method:
- Place the potatoes in a saucepan and cover with cold water. Bring to the boil and simmer for 10 minutes until tender. Drain.
- Add 2 tbsp oil to the pan and fry the chilli and paprika for 1 minute. Add the remaining ingredients and coarsely mash, seasoning to taste. Divide into 2 and pat into flat round cakes.
- Heat a little oil in a non stick frying pan and fry potato cakes for 1-2 minutes until golden.
