Chinese Leek and Red Peppers in Singapore Style Noodles

A simple and healthy authentic chinese dish ready in under 15 minutes.
Ingredients:
1 Red Peper1 Leek
The juice from half a lime
1 tbsp of vegetable oil
2 Cloves of Garlic
4 Spring Onions
1 tbsp of Ginger
8 tbsps of light soya sauce
2 tbsps of sugar
50 grams of Singapore style noodles
method:
- Put the noodles in boiling water for the time stated on the packet. Drain when cooked and set aside.
- Whilst the noodles are cooking prep the vegetables. Now chop the ginger and garlic very finely. Chop the red pepper into small chunks and the dice the leek and spring onions.
- Add the soya sauce to a jug and add 2 tbsps of sugar.
- Add the vegetable oil to the wok and apply lots of heat until the wok smokes. Quickly add the chopped vegetables and stir fry for only 2 to 3 minutes - get the vegetables hot and slightly glazed looking. Add half of the soya sauce mixture and cook for another minute.
- Now add the noodles, remaining soya sauce and sqeeze the juice of half a lime into the wok. Stir fry for another 30 seconds to a minute.
- Serve immediately with a Tiger beer or cold bottle of crispy white wine. Bon appetite!
