Chunky Vegetable Soup
Serves: 4
Ready in: 30 to 60 mins
Ingredients:
1 chopped onion2 medium carrots, chopped
350g swede, cut into small chunks
1 large leek, sliced
400g can chopped tomatoes
1.2lt vegetable stock
2 tsp dried oregano
1 tbsp fresh parsley, chopped
salt and freshly ground black pepper
100g Pilgrims Choice Extra Mature Cheddar Cheese
method:
- Heat 1 tbsp olive oil in a large saucepan and add the onion. Cooking until softened.
- Add the remaining vegetables, then tip in the can of tomatoes and pour in the stock. Add the oregano and parsley. Bring to the boil, then reduce the heat and simmer, partially covered, for 20-25 minutes or until the veg is tender.
- Season, ladle into warm bowls and serve topped with the grated cheese.
