Date and Pecan Loaf

Ingredients:
300g buckwheat flour 200g apple puree 10 tbsp Beloved Date Nectar 2 bananas 8 medjool dates 100ml almond milk 1 tsp cinnamon 60g pecans 1 tbsp coconut oil 2 tbsp maple syrupmethod:
- Preheat the oven to 140C/275F/Gas Mark 1
- Pit the dates and cut them into small chunks.
- Use your hands to break up the pecans so that they are a similar size to the dates. Then add all of the ingredients into a large mixing bowl and mix thoroughly.
- Use a little coconut oil to grease a loaf tin, then pour in the mixture.
- Bake in the oven for 1 hr 15 mins, then allow to set for about 10 minutes before eating hot or cold.
- Serve with sliced banana and maple syrup
