Caesar Salad

Ingredients:
[hd]For the dressing[/hd]4 green olives
2 roasted garlic cloves
2 free-range egg yolks
1/2 tsp Dijon mustard
4 tbsp red wine vinegar
4 tbsp lemon juice
8 drops Tabasco
100ml olive oil
50ml sunflower oil
[hd]For the salad[/hd]
4 baby gem lettuce
1 red onion, finely sliced
a baguette
handful green olives
handful SunBlush tomatoes
olive oil, for frying
method:
- For the dressing, crush the olives and two roasted garlic cloves and place in a bowl with the egg yolks, mustard, red wine vinegar, lemon juice and Tabasco. Combine together, then slowly whisk in a mixture of 100ml olive oil and 50ml sunflower oil bit-by-bit. Season to taste.
- Make croutons by frying roughly torn large-ish pieces of baguette in olive oil. Mix the lettuce, red onion, croutons, olives and SunBlush tomatoes in a large bowl, toss with the dressing and serve.
