Filled Oat Biscuits
Serves: 8
These oaty, cream-filled biscuits are ripe for dunking into a good cuppa!
Ingredients:
100g butter, diced and softened100g brown sugar
1 medium free-range egg yolk
½ tsp vanilla extract
100g self-raising flour
75g oats
For the filling:
180g soft cheese50g icing sugar
1 tsp vanilla extract
method:
- Preheat the oven to 190C/170F/Gas 5. Line two baking trays with parchment.
- Whisk the butter and sugar in a large bowl until fluffy. Add the egg yolk and vanilla extract, followed by the flour and oats - mix until evenly combined. Divide the dough into 16 and roll into balls. Place on the baking trays, pressing the balls into discs. Bake for 10-12 minutes until golden, then transfer to a wire rack to cool.
- While the biscuits are cooking, prepare the filling by whisking the cheese, sugar and vanilla extract together until smooth. Spoon into a piping bag with a 1cm nozzle and pipe onto the base of eight biscuits. Top with the remaining biscuits and chill before serving.
