Ginger Vegetable Stir-fry

Ingredients:
1 tbsp toasted sesame oil2 leeks, finely sliced
2 garlic cloves, crushed
1 heaped tbsp grated fresh ginger
left over cooked sprouts and carrots
fresh coriander, chopped
method:
- Heat the sesame oil in a wok or saucepan and gently fry the leeks, garlic and ginger for a couple of minutes.
- Add the cooked left over sprouts and carrots and stir gently until the veg are heated through.
- Scatter with fresh coriander to serve.
