Gnocchi Alla Sorrentina
Serves: 6
Ready in: 15 to 30 mins
Ingredients:
2 tbsp olive oil1 red onion, diced
400g can Pizza Express Passata Pomodoro
6 handfuls of fresh basil leaves
800g gnocchi
300g vegetarian mozzarella ball, cut into small pieces
40g vegetarian Parmesan-style cheese, grated
salt and black pepper
method:
- Preheat a frying pan and add the oil and onion and cook until the onion is translucent. Add the passata and basil and simmer for around ten minutes.
- Meanwhile, cook the gnocchi in salted boiling water and once they float, drain and add to the sauce and the mozzarella. Toss lightly and once the mozzarella starts to melt, place on a pasta plate.
- Scatter the top with vegetarian Italian hard cheese, season with salt and pepper and serve.
