This thrown-together salad embodies all the flavours of summer

Green Bean and Mozzarella Salad Recipe: Veggie

Ingredients:

200g fresh peas, cooked
200g fresh green beans, cooked
vegetarian mozzarella ball, torn
4 cherry tomatoes, cut in half
2 vine tomatoes, each cut into 6
4 tbsp extra virgin olive oil
the zest and juice of 1 lemon
salt and black pepper
small handful of basil, torn
2 barbecued flatbreads

method:

  • Place the cooked peas, beans, torn mozzarella and tomatoes in a medium-sized bowl.
  • Mix together the oil, zest and juice in a small bowl and season.
  • Pour over the salad and toss gently. Spoon onto a large salad dish, sprinkle with basil and serve with barbecued flatbreads.
