Griddled Halloumi with Pomegranate Salsa
Serves: 4
Ready in: 30 to 60 mins
This delicious recipe makes for a pretty and mouthwatering starter
Ingredients:
150g pomegranate seeds1 small red chilli, deseeded and finely chopped
1/2 red onion, finely chopped
2 tsp pomegranate syrup
1 lime, finely grated zest
4 tbsp chopped fresh coriander
salt and freshly ground black pepper
4 Yamas! Halloumi Burger Slices, cut into 8 strips
little flour, for dusting
olive oil, for brushing
method:
- To make the salsa: Place all the ingredients in a bowl and stir well. Season with salt and freshly ground black pepper. Leave to stand for 30 minutes, to allow the flavours to develop.
- Dip each strip of halloumi cheese in cold water, then coat in a little flour.
- Brush a frying pan with a little oil. Heat over a medium heat until hot, then griddle the cheese for about 30 seconds on each side, or until it is lightly golden. Serve immediately with a large spoonful of the pomegranate salsa.
