Grilled Hummus Sandwich
Serves: 1
Ready in: Under 15 Mins
Cost Cutting Eco Friendly Quick Make
I had a sandwich similar to this at a local deli - but it was overloaded and heavy. I lightened it up by simply using less hummus and cheese. I also imagine trying this with spinach leaves if you are opposed to basil.
Ingredients:
2 slices of seedy/hearty bread2 - 3 Tablespoons of your favorite hummus
2 thin slices from a whole tomato
2 - 3 fresh basil leaves
1 slice provolone cheese (optional)
Butter or margarine for grilling
method:
- Spread 1 slice of the bread with the hummus.
- Follow with the tomato slices, basil leaves, and cheese, if using.
- Spread a thin layer of butter/margarine on one side and grill on medium heat till the bread is browned.
- Spread butter/margarine on other side while on the grill, and carefully turn the sandwich over and grill till browned on the other side.
- Serve with corn chips and a great pickle. Heaven on a plate.
