Making your own mayonnaise has never been easier!!!
Ingredients:
1 X Garlic clove1 tsp White wine vinegar
2 X Large free-range egg yolks
2 tsp Dijon mustard
A pinch of sugar
250ml Vegetable oil
Sea salt and freshly ground black pepper
method:
- Crush the garlic in a pestle and mortar along with a pinch of salt. Pop in a bowl with the white wine vinegar, egg yolks and mustard. Add the salt, pepper and sugar and whisk together.
- Start whisking and very slowly, add your oil, add just a few drops to begin with then slowly trickle in the rest of the oil, patience is the key. Stop when you have a shiny and wobbly mayo. Taste, adjust the seasoning and serve.
