Italian Spinach Frittata

For a nutritious lunch on the go, prepare a light Italian Spinach Frittata and serve with a green salad

Ingredients:
80ml Reduced Sugar Almond Breeze® 1 tbsp butter 75g chopped onion 42g marinated artichoke hearts, chopped 45g roasted red pepper, chopped 450g fresh spinac,h finely chopped 6 free-range eggs ½ tsp garlic salt ½ tsp dried basil 120g Italian blend cheese, shreddedmethod:
- Preheat oven to 400°F and melt butter in a medium-size oven-safe skillet.
- Add onion and cook for 5 minutes to soften. Add spinach, artichoke hearts and red pepper and cook until spinach is weltered and dry.
- Beat together Almond Breeze®, eggs, garlic salt and basil in a medium bowl.
- Add to skillet with cheese and cook until eggs are about half cooked, stirring occasionally. Place skillet in oven and cook for 10 minutes more.
