Jersey Royals Sag Aloo
Serves: 4

“Don’t just serve this sag aloo alongside other curries – it’s great with a host of dishes – try it with veggie sausages and salad”

Ingredients:
900g Jersey Royals, scrubbed25g butter
1 large onion, thinly sliced
1 garlic clove, thinly sliced
½ tsp cumin seeds
¼ tsp ground turmeric
1 tsp garam masala
2 tsp grated fresh root ginger
200g young leaf spinach
salt and freshly ground black pepper
method:
- Cook the Jersey Royals in lightly salted boiling water until just tender – about 15-20 minutes. Drain well.
- About 10 minutes before the potatoes are ready, melt the butter in a large frying pan and add the onions and garlic, cooking them gently until very soft. Add the cumin seeds, turmeric, garam masala and ginger and cook for two more minutes.
- Tip the hot Jersey Royals into the frying pan and add the spinach, stirring it in gently until the leaves had wilted. (This will only take a couple of minutes). Season to taste, then serve.
