Leeks with Mustard & Mascarpone on Garlic Toast

Ingredients:
2 medium leeks, chopped and washed again30g unsalted butter
100ml whipping cream
150g vegetarian mascarpone cheese (or goat's cheese)
2 tbsp parsley, finely chopped
1 tsp Tewkesbury mustard (optional)
freshly ground black pepper
4 slices crusty bread
1 garlic clove
method:
- Melt the butter and add the leeks. Sauté for five minutes until the leeks are tender. Turn the heat down and add the cream. Boil for about 1 minute or until the mixture looks nice and thick. Add the mascarpone or goat's cheese and beat it well into the mixture until melted and bound together. Season with the pepper, parsley and mustard.
- Toast the bread, then rub it with the garlic. Place the cheesy leeks on top and serve. Garnish with watercress leaves.
