Lentil and Kale Soup

Ingredients:
150g Puy lentils2 x 200g packs kale
1.5 lt vegan gluten-free vegetable stock
195g tin sweetcorn, drained
4 sprigs thyme
400g tin chopped tomatoes
method:
- Cook the lentils in boiling water for 15 minutes, drain and return to the pan, add the kale, stock and the remaining ingredients. Simmer covered for eight minutes and then season.
