Linguine with Blue Cheese Sauce

If you want something tasty but don't have hours to slave over the stove, this dinner can be on the table in under 15 minutes!
Ingredients:
1 red onion, peeled and chopped1 tbsp olive oil
4 tbsp (or a good splash) vegetarian white wine
100g The Co-operative Rich and Creamy Stilton
8 walnut pieces, roughly chopped
250g linguine
fresh green salad, to serve
method:
- Fry the onion in the oil until soft, add the wine and leave to bubble. Add the cheese and walnuts and toss together.
- Bring a pan of water to the boil and cook the linguine according to the packet instructions. Drain the pasta, add the sauce and mix together. Serve with a green salad.
