Ingredients:
900g Cypriot potatoes8 tbsp olive oil.
12 black olives (pitted and chopped)
50g grated vegetarian Parmesan-style cheese
method:
- A no-fuss way to jazz up any dinner. Peel 900g Cypriot potatoes into even-sized pieces and boil until tender. Mash by putting them through a mouli or use an electric hand whisk. Heat gently for 1-2 minutes to steam dry. Slowly beat in 8 tbsp olive oil. Mix in 12 black olives (pitted and chopped), 50g grated vegetarian Parmesan-style cheese, and salt and pepper to taste. Drizzle with extra olive oil and serve.
