Mexican Veggie Fajitas

Try this veggie take on the Mexican favourite from Alpro. Be sure to make extra as these will be super popular!

Ingredients:
1 large sweet potato1 onion
1 aubergine
2 tbsp olive oil
1 sachet Fajita seasoning
8 tortillas
1/4 iceburg lettuce
8 tbsp guacamole
6 tbsp Alpro Greek Style Plain
2 springs of parsley
ground pepper
salt
method:
- Peel and slice the sweet potato into thin strips, and cut the onion and aubergine into long strips.
- Place the sweet potato, aubergine and onion together in a small bowl. Mix together the olive oil and fajita seasoning, pour the seasoned oil over the vegetables and toss well.
- Preheat a large frying pan over a high heat. Sauté the vegetables until they are tender, but are still crunchy, for around six to eight minutes.
- Warm up the tortillas in the microwave and serve with the vegetables, iceburg lettuce, guacamole and Alpro Greek Style Plain. You can finish off by seasoning it with parsley and a small amount of salt and pepper.
