Mixed Olives, Artichokes & Feta Pastries
Serves: 6
These tasty little pastries are super for picnics
Ingredients:
2-3 packs of unearthed® Sabrina’s Mixed Olives with Artichokes & Feta, drained of oil contents roughly chopped and any olive pits removed black pepper 200g feta cheese 2 tbsp of dried oregano 1 pack of Jus Rol ready-rolled puff pastry sheet, rolled out a little if needed 1 whole free-range egg, beaten sprinkling of Nigella seeds (optional)method:
- Preheat oven to 200C/400F/Gas 6.
- In a bowl, combine the olive mixtures, crumble in the feta, add the dried oregano, season with black pepper and mix the ingredients together using a fork. Don't worry about mashing them up a little, that's perfectly okay!
- Cut the puff pastry into six equal squares.
- Divide the olive mixture into six equal portions and shape into a ball and place each ball into the centre of the pastry squares.
- Pat each ball down to flatten them a little and taking one corner of the pastry, pull it over the mixture into the opposite corner to make a triangular pastry shape (pushing the filling down gently if needed). Seal the edges of the pastry by pinching them or using a fork to seal them shut.
- Lay them on a baking/parchment paper lined oven tray and brush with the beaten egg.
- Sprinkle with Nigella seeds and bake in the oven for 25 minutes or until golden brown. Once cooked, serve warm, perfect with a salad on the side.
