Orange and Marzipan Simnel Cake

Ingredients:
175g butter, softened175g light soft brown sugar
3 free-range Large Lion Quality eggs, beaten
175g self-raising flour, sieved
1 tsp baking powder
1 x 200g tub mixed chopped peel
100g ground almonds
rind and juice of 1 orange
1 tsp almond essence
[hd]to decorate[/hd]
3 tbsp marmalade, sieved
675g marzipan
icing sugar for dusting
50g white chocolate, melted
50g plain chocolate, melted
5cm wide ribbon to tie around
method:
- Preheat the oven to 190C/375F/Gas 5. Grease a 20cm (8’’) round, deep cake tin and line with parchment.Place the butter, sugar, eggs, flour and baking powder in a large bowl. Use an electric whisk to beat the mixture until it is smooth and glossy.
- Fold in the remaining ingredients and spoon into the tin. Bake for 45-50 minutes, then cool on a rack. To decorate, cut the cake in half through the middle. Roll out two thirds of the marzipan on an icing sugar dusted surface and cut out two 20cm (8’’) rounds. Brush the centre of the cake with marmalade and sandwich together with one of the marzipan rounds.
- Brush the top of the cake with marmalade and arrange the second marzipan round on top, crimping the edges. Roll the remaining marzipan into 11 balls and arrange on top, attaching with marmalade.
- Melt the chocolates in separate bowls over simmering water. Spoon into separate greaseproof paper piping bags, drizzle over the top of the cake and leave to set. Tie a ribbon around the cake.
