Organic Bread and Butter Pudding

Ready in: 30 to 60 mins
Ingredients:
8 thick slices organic white bread50g organic margarine
350ml Provamel organic milk alternative
50ml Provamel organic cream alternative
2 medium organic free-range eggs
1 tsp organic vanilla essence
1 tsp organic mixed spice (such as Steenbergs)
30g organic brown sugar
100g organic mixed raisins and sultanas
30g organic demerara sugar
method:
- Preheat oven to 180C/355F/Gas 4. Cut the crust from the bread and spread generously with margarine. Now place the bread in the bottom of a well-greased casserole dish (about 15cm x 10cm), with the slices overlapping.
- Put the demerara sugar to one side. Beat together remaining ingredients and pour over. Sprinkle with demerara sugar.
- Place in a roasting pan half filled with simmering water and cook for about 30 minutes until the top is crusty and the filling still soft.
