Organic Tofu in Cider Cassoulet
Serves: 4
Ready in: 30 to 60 mins
Ingredients:
1 tbsp mild olive oil1 medium red onion, diced
1 garlic clove, crushed
sprinkle thyme leaves
2 medium cooking apples, diced
125g chestnut mushrooms, cut into quarters
200ml dry cider
1 tbsp Dijon mustard
1 x 180g packet Provamel Organic Tofu Pieces
75g Provamel organic alternative to soft cheese
125g baby leaf spinach, roughly chopped
black pepper and sea salt
method:
- Lightly sauté the onion and garlic in the olive oil for five minutes to soften without browning. Add the thyme, diced cooking apple and mushrooms. Cook for a further five minutes until the apple just starts to soften.
- Add the cider, mustard and tofu pieces and bring to a gentle simmer for five minutes. Stir in the cream cheese, spinach and seasonings and cook for a further minute until the spinach just starts to wilt. Serve on a bed of creamy mashed potato.
