Pea and Mint Houmous

A great quick cheat using lemon yoghurt as a base. If you're using frozen peas for this recipe, simply cover with boiling water, leave for two minutes then drain.
Ingredients:
175g fresh podded peas, or frozen peas, defrosted1 small garlic clove, crushed
pinch of salt
4 tbsp Onken Sicilian Lemon yoghurt
1 tbsp freshly chopped mint leaves

crackers, pitta crisps or a selection of vegetable crudités
method:
- Cook peas in lightly salted water for two minutes. Drain and cool under cold water. Tip into a food processor, add garlic, salt and yoghurt and whiz until puréed. Add mint and whiz again.
- Serve with crackers, pitta crisps or vegetable crudités.
