Pea and Potato Frittata

Ingredients:
1 tbsp olive oil100g diced potato
2 free-range eggs
80g frozen peas
15g vegetarian grated Cheddar
method:
- Heat 1 tbsp olive oil in a pan and lightly fry 100g diced potato for ten minutes until golden. Whisk 2 free-range eggs and mix with 80g frozen peas and 15g vegetarian grated Cheddar. Season to taste and add to the potato pan. Gently cook in the pan for ten minutes until cooked. Brown the top under the grill if required.
