Pea, Bean & Avocado Dip

Pea, Bean & Avocado Dip Recipe: Veggie

Ingredients:

110g freshly podded broad beans
100g fresh peas
1 tomato, deseeded and chopped
1 ripe avocado, halved, destoned and flesh scopped out
juice of 1 lemon
2 tbsp olive oil
salt and pepper to taste

method:

  • Boil the broad beans and peas in separate pans for 2-3 minutes.
  • Place the tomato, avocado and lemon juice to a medium sized bowl and stir well.
  • Add the broad beans, peas and olive oil then season to taste.
