Pecan Meringues
Serves: 8
These mini meringues are a great little sweet nibble. You can also pop them on top of a summer bake or dessert for a stunning effect
Ingredients:
15 pecan halves 4 tsp Splenda 3 free-range egg whites 1 tsp cream of tartarmethod:
- Preheat oven to 130C/275F/Gas 1 and line a baking sheet with greasproof paper. Chop the pecans finely and mix with the Splenda in a food processor.
- Beat the egg whites until they gain volume then gradually add sugar and the cream of tartar until egg whites hold firm peaks. Sprinkle nut mixture over egg whites and fold in.
- Spoon into eight small mounds on the baking sheet and bake for 1 hour and 15 minutes – 1 hour and 30 minutes until the meringues have browned. Leave to cool and serve.
