Quick and Easy Salsa

This is a salsa recipe passed down my mum's side of the family who are all from America. It's not a classic salsa insomuch as you serve it hot but it's blooming delicious with some cheesy nachoes and an equally cheesy film...
Ingredients:
1 tbsp olive oil1 white onion, diced
1 garlic clove, crushed
1 tin good quality chopped tomatoes
1 1/2 tbsp white wine vinegar
1 tsp ground cumin
1/2 tsp chilli powder
1/2 tsp caster sugar
salt and freshly ground black pepper
method:
- Saute the onion in the olive oil until the onion is soft. Add the garlic and gently fry for a minute or two taking care not to burn it.
- Add your tin of chopped tomatoes, the white wine vinegar, cumin, chilli powder and sugar. Simmer for as long as you can bear it (at the very least, 10 mins!) and thicken with tomato puree if necessary.
- Season with salt and freshly ground pepper to taste just before serving. It goes fantastically with cheesy nachoes or you can blitz it in a food processor for a spicy tomato sauce perfect for potato wedges. Alternatively, use it as a springboard for experimenting with your own taken on a chilli 'non' carne.
