Quorn Wild Garlic & Parsley Toulouse Sausage Casserole

Casseroles can flummox even the most experienced veggie cook but this is an excellent place to start
Ingredients:
1 tbsp vegetable oil1 onion, chopped
3 garlic cloves, crushed
2 carrots, diced
2 bay leaves
3 sprigs fresh thyme
2 tbsp tomato purée
100ml vegetarian white wine
200g dried Puy lentils
1 lt vegetable stock
1 tbsp Dijon mustard
8 Quorn Wild Garlic & Parsley Sausages
freshly ground black pepper
method:
- Heat the oil in a large pan and sauté the onion, garlic and carrots for 2-3 minutes, or until soft.
- Add the herbs and stir in the purée and wine. Cook for another two minutes.
- Add the lentils, stock and mustard, bring to the boil and simmer gently for 35-40 minutes
- Meanwhile, cook the Quorn sausages under a hot grill until golden brown then add to the casserole 10 minutes before the end of cooking time.
- Taste and season with freshly ground black pepper if necessary.
