Ginger syrup adds a spicy twist to this beautiful chocolate banana bread recipe, created by Great British Bake Off 2016 competitor Selasi Gbormittah.
Ingredients:
2 large free-range eggs140g honey
3 medium bananas (about 170g)
40g light brown sugar (optional)
250g plain flour
1 tsp bicarbonate of soda
1/2 tsp baking powder
a pinch of nutmeg
1/2 tsp ground ginger
1 tsp ground cinnamon
60g raisins
30g chopped pecans
50g chopped dark chocolate
50ml milk
65ml melted Vita Coco coconut oil
1 tbsp caster sugar
1 tsp grated/chopped ginger
method:
- Preheat your oven at 180C/350F/Gas 4. Grease and line a 9-inch loaf tin or round cake tin.
- Beat together the honey and eggs. Add the mashed banana and sugar, and continue to whisk.
- Add the flour, raising agents and spices. Mix everything together to form a smooth mix.
- Fold in the raisins, nuts, coconut oil, milk and chocolate. Pour the batter into your prepared tin, then bake for 45-50 minutes.
- Meanwhile, make the syrup by bringing all of the syrup ingredients to a boil for 15 minutes, or until it feels sticky to touch. Set aside to cool.
- When the cake is ready, pour the syrup onto the hot cake and leave the cake in the tin for five minutes before turning onto a wire rack.
